    Where fruit ripens slowly

    In the high mountains of the northwest, autumn comes early and the nights are cold. The fruit is small, ripens slowly, and has thick, tart skins.

    The harvest

    A few weeks a year

    The fruit comes in over a few weeks in late autumn. Every bottle’s tag carries the year its batch was picked.

  3. A hand pouring liquor into a glass jar of fruit

    Steeping

    Letting time do the rest

    The fruit is packed into glass jars, covered with liquor and sealed. One, three or five years later it is drawn off and bottled.

How we work

  • Only ripe fruit

    Green or bruised fruit is sorted out before steeping.

  • Batch and years on the tag

    Every bottle carries a tag with its autumn batch and years of steeping.

  • No hurry

    Nothing is bottled before its years are up.
